Recipe: Cynthia - spare ribs in a claypot (2)

Main Dishes - Pork, Ham

Hope one of these is helpful - sorry it took so long for me to
post them.

Garlic Marinated Spareribs

4 lbs. country style spareribs
1 C. cider vinegar
3 C. water
2 tsp coriander seeds, coarsely crushed
2 tsp cumin seeds, coarsely crushed
5 cloves garlic, cut into slivers
1/4 tsp cayenne petter
2 tsp salt
1/4 C dry white wine

Three to four days before cooking spareribs, place spareribs
in deep bowl. combine remaining ingredients except wine; pour
over spareribs. Refrigerate covered, turning spareribs
occasionally, 3 to 4 days.

Soak top & bottom of 3 1/4 qt clay cooker in water about 15 min;
drain.

Remover spareribs from marinade; place fat sides up in cooker.
Discard marinade. Pour wine over meat.

Place covered cooker in cold oven. Set oven @ 425 deg. Bake until
spareribs are tender & brown, about 2 hrs.

Pour off & reserve cooking liquid; cover cooker to keep meat warm.
Skim & discard fat from cooking liquid; pour cooking liquid into
saucepan. Heat to boiling; boil until reduced and slightly
thickened. Carve meat between ribs, spoon sauce over meat.
serves 8.

Country Style Spareribs Polynesian

4 to 5 lbs country style spareribs, cut into serving pieces
1/2 C soy sauce
1/2 C cider vinegar
1/2 C pineapple juice
1/2 C sugar
1 med. onion, thinly sliced, separated into rings
1 clove garlic, minced
1 tsp pared, grated fresh ginger root or 1/4 tsp
ground ginger
1/4 tsp ground cloves
1 T sesame seeds

Soak top & bottom of 3 1/4 qt clay cooker in water about
15 min; drain.

Place spareribs, fat side up, in cooker.

Place covered cooker in cold oven. Set oven at 425 deg.
Bake 1 1/2 hrs, pour off & discard drippings.

While spareribs are baking, heat remaining ingredients
except sesame seeds in med. saucepan, stirring constantly,
until sugar dissolves & mixture bubbles; reduce heat. Simmer
covered 10 minutes.

Pour about 1/2 of the sauce over spareribs. Bake covered,
adding remaining sauce in two or three additions, until
meat is tender & brown, about 1 hr.

Sprinkle spareribs with sesame seeds. Bake uncovered until
seeds are light brown. 5 to 10 min. Serves 8 - 10
