DECADENT TURTLE CHEESECAKE
FOR THE CRUST:
2 cups chocolate wafer cookies, crushed
1/4 cup butter, melted
FOR THE FILLING:
20 ounces cream cheese, softened
1 cup sugar
1 1/2 tablespoons flour
1/4 teaspoon salt
1 1/2 teaspoons vanilla
3 eggs
2 tablespoons heavy (whipping) cream
3/4 cup toasted pecans, chopped
FOR THE CARMEL TOPPING:
14 ounces caramels
1/4 cup whipping cream
FOR THE CHOCOLATE TOPPING:
4 ounces semisweet chocolate
1 teaspoon butter
2 tablespoons heavy (whipping) cream
Preheat oven to 450 degrees F.
TO MAKE THE CRUST:
Combine cookie crumbs and butter. Press into bottom of 9 inch springform pan.
TO MAKE THE FILLING:
Beat cream cheese in a large bowl with electric mixer until creamy. Beat in sugar, flour, salt and vanilla and mix well. Add eggs one at a time beating well after each addition. Blend in cream and pour over crust.
Bake 10 minutes. Reduce oven temperature to 200 degrees F and continue baking for 35-40 minutes longer or until set. Loosen cheesecake from rim of pan, cool completely before removing rim of pan.
Meanwhile prepare carmel and chocolate toppings.
Drizzle cheesecake with toppings. Refrigerate. Sprinkle with pecans before serving.
