DEVILED TURKEY DRUMSTICKS
"Mustard and Tabasco sauce add spice to these juicy, crumb-coated turkey legs."
4 turkey legs (ready to cook), about 2 1/2 lbs.
5 slices day-old white bread
1 egg
1/2 cup mustard
1 small onion, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried thyme
1/8 teaspoon Tabasco sauce
1/2 cup chopped fresh parsley
Fresh parsley sprigs (optional for garnish)
Preheat oven to 350 degrees F. Coat roasting pan with nonstick cooking spray.
Add drumsticks. Cover with foil; roast until thermometer inserted into thickest part of meat away from bone registers 180 degrees F, about 1 1/4 hours.
Meanwhile, in food processor or blender, in batches if necessary, process bread until coarse crumbs form; set aside.
In bowl lightly beat egg with mustard, onion, salt, pepper, thyme and Tabasco; refrigerate until ready to use.
In large shallow dish combine bread crumbs with parsley.
Remove drumsticks from oven; let stand 10 minutes.
Increase oven temperature to 425 degrees F.
Brush drumsticks with mustard mixture; coat with bread crumb mixture, patting crumbs lightly to adhere. Return drumsticks to roasting pan. Coat drumsticks with nonstick cooking spray.
Roast until bread crumb mixture is lightly browned and crispy, about 15 minutes.
Transfer to serving platter; garnish with parsley, if desired.
