This is about as easy as low fat cake gets.
Take any chocolate cake box mix, and add a can of Diet Coke. Mix and bake as directed on the box. Thats it--no eggs, oil, anything else. Just the Diet Coke and the cake mix.
When you get bold, you can try variations. Diet Cherry Coke with Chocolate cake mix. 7-Up with any white or yellow cake mix. Diet Ginger Ale with a Spice cake mix.
Frost as you normally would. This is so moist that I don't usually bother, though.
This recipe does not keep well, however. Make sure you eat it the same day you make it.
