Recipe: Bisquick Cocoa-Cinnamon Cake with Toasted Pecan Topping (Bisquick recipe, broiled topping)

1 1/2 cups Bisquick baking mix
1/2 cup sugar
1/4 cup unsweetened cocoa powder
1/2 cup water
1/4 cup corn oil
1 teaspoon vanilla
1/2 teaspoon ground cinnamon
1 large egg
FOR THE TOASTED PECAN TOPPING:
1/3 cup flaked coconut
1/3 cup brown sugar, packed
1/3 cup pecans, chopped
3 tablespoons butter, softened
2 tablespoons 2% milk
Preheat oven to 350 degrees F. Grease a 8 x 8-inch square baking pan or a 9-inch round cake pan.
Beat all ingredients together except Toasted Pecan Topping. Beat mixture on low speed 30 seconds and then at medium speed 2 minutes. Scrape bowl while beating. Pour batter into prepared pan.
Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Remove cake from oven.
Set oven to broil.
Mix all ingredients together for Toasted Pecan Topping and spread on cake.
Broil cake top 3-inches from heat for 2 to 3 minutes or until topping is golden brown.
Makes 1 (single-layer, 8- or 9-inch) cake, 8 servings
