DIETER'S FISH AND SPINACH
2 (4-ounces each) frozen sole fillets, thawed
1 tablespoon ReaLemon Reconstituted Lemon Juice
Salt and Pepper (to taste)
1 (10-ounce) package frozen chopped spinach, cooked and well drained
1/4 cup fat free milk
2 slices Borden Lite Line Pasteurized Process Cheese Product, cut into small pieces
Paprika (for garnish)
Preheat oven to 400 degrees F.
Brush fillets with ReaLemon; sprinkle lightly with salt and pepper.
Spread spinach over bottom of 8-inch shallow baking dish. Pour milk over spinach; top with cheese product, then fillets.
Cover and bake 20 minutes or until fish flakes with fork. Sprinkle with paprika.
Makes 2 servings
