Recipe: Doughnut Waffles from 1937

Breakfast and Brunch
DOUGHNUT WAFFLES FROM 1937

3 cups Pancake & Waffle mix
1 cup sugar
1/2 teaspoon ground nutmeg
2 egg yolks
1 egg
1/3 cup milk
4 tablespoons melted butter

Mix flour (pancake mix), sugar and nutmeg.

Beat egg and egg yolks together until light, add milk and mix well. Now add to dry ingredients, stirring until all lumps are removed. Last, blend in melted butter.

Bake in a moderately hot waffle iron and when finished separate into triangles, brush with more melted butter and dust with powdered sugar. Serve at once.

Tips: This batter will be extremely stiff, but spreads when it contacts the hot waffle iron. Allow one wooden mixing spoonful for each waffle section and place batter in center of that section.

Makes 6 waffle rounds.
