Recipe: Dried Cucumber Chips (2) and some information

DRIED CUCUMBER CHIPS

"Peel the cucumbers. Using a Mandolin, cut them in about 1/8-inch or thicker slices, individual preference applies here.

Arrange the slices in you favorite food drier touching each other, and fill up the tray to minimize waste of the spices.

Sprinkle them with Garlic and Parsley salt, black pepper and freeze dried minced garlic. If you really want them hot, put on some dried red pepper flakes. Since the cucumber slices are very moist, the spices will be rehydrated and stick like glue when dried. (if you are timid, go easy on the spices or eliminate them altogether.) I intend to try sprinkling some malt vinegar on the next batch after first drying, then drying again, to see how that turns out.

Dry at 135 degrees F until they are crispy and crunchy like a potato chip, serve them with beer or just soft drinks as a side snack, you will be the life of the party.

Dry well and you can vacuum pack them for long term storage or store them in the FOOD SAVER Vacuum jars on your table to snack with meals."

FOOD PRESERVATION - CUCUMBERS

I always get more cucumbers than I know what to do with during the growing season. I don't really like to make home-made pickles, but I found another way to preserve my cucumbers that is quite easy and tasty. I dehydrate them. Cucumbers dry very well, but they don't hold up when you rehydrate them, so I like to make Dried Cucumber Dill Chips.

Small cucumbers dry the best (6" long) and they should not be stored any longer than 2 weeks in the refrigerator before drying.

DEHYDRATED CUCUMBER DILL CHIPS

4 cucumbers - washed and sliced into 1/4 inch slices

Stir Together:
4 tbsp fresh dill weed
2 tbsp lemon juice
1/3 cup filtered water
1 tsp real salt dash of cayenne pepper

Add sliced cucumbers to dressing. Cover and chill overnight. After cucumbers are chilled, drain well and place on dehydrator trays. Dry at 130-135 F until crisp. Store chips in freezer in increase shelf life.

Cucumber is technically a fruit like tomatoes, but since most people think of it as a vegetable, I'll include it here on the dehydrating vegetables page. Dried cucumbers are fair for snacking on like a chip or they can be chopped or powdered to use as a seasoning in dips and soups. Because of the thick waxy coating, I peel cucumbers first and then cut into 1/8 inch slices. Arrange in a single layer and sprinkle with a little salt if desired. Dehydrate at 125 degrees F for six to eight hours until leathery. Increase temperature to 135 degrees F and dry cucumbers for a few more hours if you plan to powder them.
