I dry my peppers every year and I do use my dehydrator. I put plastic wrap on the trays so the peppers (the hot ones) don't get on the trays because they can stain the trays and make other food hot. I also dry mine by just laying them on trays and leaving them in the open. They should be turned every day or so. Then you can crush them or grind to a powder and put them in your spice rack!
