Recipe(tried): Drying Persimmons

Preserving - Dried Foods
I like to dry my persimmons whole in the food dehydrator, and then store them in quart canning jars in the freezer. You can slip the seeds right out before you use them.

just rinse off the persimmons and put them on the dehydrator try and dehydrate them until they are firm like prunes and they turn brown. they are a great substitute for dates in cookies and recipes this way, the kids can't tell the difference. And they are good for snacks. I freeze persimmon pulp too in 1 cup packages. I put the packages in sandwich bags, lay them out on a cookie sheet flat to freeze, and then when they are frozen, take the bags and put them in a freezer bag. They don't take much room that way.
Hope this helps!
