Dulce de Leche Cookies
4 tbsp. butter
1/2 cup sugar
4 eggs
1 cup Maizena (or cornstarch)
1/2 tbsp. baking powder
Dulce de Leche (milk jam) or jelly
Preheat oven to 375 and grease and flour a cookie sheet or baking pan.
Mix butter with sugar in a bowl. Add the eggs, Maizena (or cornstarch) and baking powder. Spoon mixture onto pan, forming circular cookies. Bake for 20 minutes. Let cookies cool. Spread Dulce de Leche or jelly on each and cover with another cookie to make a sandwich.
