DUTCH APPLE CAKE WITH BROWN SUGAR SAUCE
FOR THE CAKE:
1 cup plus 1 teaspoon all-purpose flour, divided use
1 1/4 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons granulated sugar, divided use
1/4 cup corn oil
1 medium egg
2 tablespoons milk
4 medium apples, sliced
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
FOR THE BROWN SUGAR SAUCE:
1 teaspoon flour
6 tablespoons brown sugar
1 cup water
1 tablespoon butter (no substitute)
1/2 teaspoon vanilla
Preheat oven to 350 degrees F.
Sift together the 1 cup flour, baking powder, salt and 2 tablespoons of the granulated sugar. Add oil; set aside.
Combine egg, beaten slightly, and milk. Add to the flour mixture.
Spread sliced apples into baking dish with cinnamon and nutmeg and the remaining 4 tablespoons sugar; spread the cake mixture on top.
Bake in 350 degree F oven until apples are cooked and the cake is browned.
Serve hot, with the Brown Sugar Sauce.
TO MAKE THE BROWN SUGAR SAUCE:
Combine the remaining 1 teaspoon flour, brown sugar, 1 cup water, butter, and vanilla in a saucepan and cook until thick (if you substitute margarine for butter it takes away from taste).
