Recipe: Party Scampi

PARTY SCAMPI

2 pounds jumbo shrimp
1/4 cup olive oil
Salt and pepper, to taste
3 large garlic cloves, minced
1/3 cup parsley, chopped
1/3 cup seasoned bread crumbs
1 stick (1/2 cup) butter, melted
Dash Tabasco sauce
1/3 cup white wine
1/4 cup grated parmesan cheese
Hot noodles or rice

Preheat oven to 300 degrees F.

Devein, wash and dry shrimp, keeping the tail intact. Arrange the shrimp, slightly flattened out, in a single layer in a large gratin pan. Cover shrimp evenly with olive oil. Sprinkle salt, pepper, garlic, parsley and bread crumbs evenly over shrimp.

Cover dish with foil and bake for 20 minutes.

Pour melted butter, Tabasco and wine evenly over the shrimp. Bake uncovered for about 5 minutes longer, or until done. Do not overcook.

Serve over cooked noodles or rice. Top with grated cheese and serve.
