Recipe: Early Morning Wife Saver (overnight strata)
Breakfast and Brunch Early Morning Wife Saver
(Must start the night before)
rec.food.cooking/Judith Milne (1996)
We have a recipe in our family that is known as "Early Morning Wife Saver", which I think originated from a Canadian Living Magazine many years ago. I make it without an actual recipe, but have made it for years. It really is a strata, if you are familiar with that type of recipe. It does have to bake for a while so I hope this is still what you are looking for.
In a 9x13 baking dish, fit side by side, 6-8 slices of bread, top with sliced ham and cheese, then top with bread slices side by side again. It will look as though you have sandwiches fit into the pan.
Beat together:
3 eggs
2 1/2 to 3 cups milk, any type (including skim)
1 tsp salt
1/2 tsp nutmeg
pinch of pepper
Pour over top of bread. Cover with plastic wrap and refrigerate overnight.
Next morning, sprinkle cornflake crumbs over top and drizzle 1/4 cup melted butter over.
Bake at 350 for about one hour.
The great thing about this is that you can make it with any variation of bread, cheese and ham or other meat.
