Recipe: Great Grandmother's Swedish Pancakes

"In response to the recent request for pancake recipes, I thought I would post one of my personal favorites. This recipe came from my Great Grandmother who was a Swedish immigrant to the U.S. in 1920."
1 cup unbleached flour
2 cups milk
3 eggs
1 tsp baking powder
4 tsp sugar
Separate the egg yolks and egg whites and put them in separate bowls.
Add all other ingredients to the bowl with the egg yolks and mix until there are no lumps in the mixture
Beat the egg whites until peaks form.
Fold the egg whites into the other ingredients.
Pour the batter onto a hot skillet and flip when the edges turn brown.
**NOTE** You need to stir the batter lightly before pouring to make sure that the egg whites are evenly distributed through the batter.
After the pancakes are done cooking, butter them and roll them. Serve with either syrup (A non-traditional way of serving them) or with fresh fruit such as raspberries.
Makes between 6 and 7 (10-inch) pancakes
