Recipe: Fly Off the Plate Pancakes
Breakfast and Brunch Fly Off the Plate Pancakes

This is my variation on the recipe that originally had this name -- I got the original from someone I don't even know, and it is not the same as what appears here, which is my version. But the name Fly Off the Plate Pancakes is so great, it had to stay. The fun of these pancakes is to make them different every time. And they are just about as easy as making them with a mix. If you're pretty hungry, this recipe only serves 2 persons (meaning 3-4 small pancakes each).
IMPORTANT NOTES: *They come out small and thick, about 4-inches in diameter, so allow for a lower flame to get the inside cooked without torching the outsides.
1 cup flour
1 tablespoon wheat germ
1/4 teaspoon salt
1 tablespoon sugar
1 tablespoon baking powder
1 egg
1/2 cup milk
1 teaspoon vanilla extract
2 round tablespoons of fat free yogurt
1 1/2 tablespoons of melted butter
Choose a couple optional ingredients:
One apple, pear, or peach cut into cubes.
Raspberries, Blueberries, Strawberries, Cherries
Raisins
Sliced bananas
Pecans, walnuts, almonds, etc.
Dashes of Cinnamon and Nutmeg
1 tablespoon cocoa Powder
Chocolate, peanut butter, or butterscotch chips!
Extra vanilla, or any other flavoring or extract.
1. Sift together the dry ingredients.
2. Beat eggs, milk and yogurt in another bowl.
3. Pour the egg mixture into the dry ingredients, beating with a whisk.
4. Add the optional items, carefully mixing.
5. Cook on a griddle or frying pan, as with any pancakes.* see important cooking note at top of recipe.
Makes 7 or 8 small pancakes. Serves 2 very hungry persons, or up to 4 reasonable persons who are also having other food with them.
The most recent extraordinarily delicious combination we had was: a little extra vanilla, a heaping tablespoon of cocoa powder, and a chopped pear. The flavor of the pear was intensified by the cooking and blended perfectly with the subtle chocolate. Mmmmmmmmmmm!
Apples, cinnamon and nutmeg are the classic mix. I also plan on doing some blackberry picking in my backyard (this is my first summer in Oregon). I'm sure we'll have to try these with the blackberries.
For an especially decadent day, chocolate chips pancakes are really great with whipped cream on top, though I have not tried them with this
particular recipe.
