EASY CRUNCHY BAKED CHICKEN
1 cut-up chicken, skin removed
2 tablespoons margarine
1 1/2 cups oat bran cereal
3 tablespoons oat bran
1 tablespoon finely chopped fresh sage
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1/2 cup lowfat yogurt
1 tablespoon spicy mustard
coriander sprigs
In baking dish, place margarine and melt in 350 F. oven. In plastic bag, mix together oat bran cereal, oat bran, sage, salt and pepper; crush with rolling pin and place on wax paper. In small bowl, mix together yogurt and mustard; brush on chicken and roll chicken in oat bran mixture to coat well. Arrange chicken in baking dish with margarine and place in oven for 1 hour. Garnish with coriander.
Makes 4 servings.
