Recipe: Egg Noodles (pasta machine)

My recipe book/manual for my Osrow pastaa machine has this recipe for Egg Noodles:

4 cups all purpose flour
1 teaspoon salt
3 eggs, medium size
Warm water

Set up pasta machine with desired 'die'. Place flour and salt in machine; cover and blend 30 seconds. Break eggs into glass measuring cup and beat lightly with fork. Add water til mixture measures 1 cup. Pour mixture slowly through slot in cover; then add 1 tablespoon more water. Run machine for 4 minutes. Extrude dough through die. Cut off first six (6) inches of dough and return to mixer container. Continue; cut off noodles at desired length.Toss lightly in hands to separate strands, then lay flat. Cook while fresh , stirring well.

Variations: To make using bread flour; ;use 1 tabvlespoon more water and proceed as above. With unbleached flour;; use ingredients in same proportions as above.

Diane - I have not made these noodles. I am not sure what the Ronca (?) machine is like. My Osrow is old (at least 18 years) but still works well. I think the company is no more, but can't remember the name that took it over.
