OLD DEVIL'S FOOD CAKE
1/2 cup (scant) unsweetened cocoa powder
1/2 cup hot water
1 3/4 cup sugar
3/4 cup margarine, softened
2 eggs, slightly beaten
1 cup milk, minus 1 tablespoon
1 tablespoon vinegar
2 1/2 cups cake flour
2 teaspoons baking soda
1 teaspoon vanilla
Preheat oven to 350 degrees F. Line three (9-inch) cake pans with wax paper, covering bottom and 1/4" of the sides (do not grease or flour pans).
In a small bowl combine cocoa powder with 1/2 cup hot water. Let cool.
In a large bowl cream together the sugar and margarine together. Add eggs and beat until fluffy. Stir in cocoa mixture; set aside.
Mix milk with vinegar. Mix flour with baking soda and add alternately with the milk-vinegar mixture to creamed mixture, beating well after each addition. Add vanilla and mix until smooth. Divide batter into the prepared pans.
Bake at 350 degrees F for 20 to 25 minutes or until a wood pick comes out clean. Set on wire rack to cool.
Ice the cooled cake with Caramel Icing or your favorite frosting.
Makes 1 (9-inch, 3-layer) cake, 12 servings
