Eggplant dip (also known as Baba Ghanoush)
One firm eggplant
2 Tbsp Tahini sauce
about 1 Tbsp lemon juice
2-4 Tbsp water
Prick eggplant with fork several times. Grill eggplant on a grill or bake in the oven for about 20 minutes or until eggplant is soft and cooked through. Let cool. Scoop out insides and mix well with other ingredients. Sometimes I need to chop the eggplant. The dip can be spread on bread.
