Eggplant Soup

4 tbs butter or margarine
1 cup chopped onion
3/4 cup chopped celery
2 lbs eggplant peeled & diced
2 cups peeled thinly sliced potatoes
1 tsp curry powder
1/4 tsp thyme
1/4 tsp basil
1 tsp salt
6 cups chicken stock
2 cups half & half
tabasco to taste

soak eggplant in cold salted water for 10 mins. Rinse. In large heavy sauce pan saute' onions, crlery potatoes and eggplant in buter or margerine for 20 mins, stirring often. Cover tightly and cook 40 mins until vegetables are tender ,stirring often.Add curry, thyme, basil and salt; stir well cook 10 mins. Stir in stock; cover and cook 40 mins stirr occassionally. Remove from heat cool slightly and puree in blender or food processor. Stir in half & half add pepper and tobasco. If too thick add milk or water.
