APPLE-PINEAPPLE CRISP
FOR THE FILLING:
1 cup peeled and sliced apple
2 teaspoons flour
Pinch of nutmeg
1/8 teaspoon cinnamon
1/2 cup pineapple chunks
1/4 cup brown sugar
1 tablespoon pineapple juice
2 teaspoons butter
FOR THE TOPPING:
1/4 cup oatmeal
2 tablespoons brown sugar
1/4 cup flour
Pinch of baking powder
1/4 cup butter
TO PREPARE FILLING:
Place sliced apples in plastic bag with flour, nutmeg and cinnamon. Shake until apples are well-coated. Divide between two greased 4 1/2-inch-wide custard cups. Top with pineapple and sprinkle brown sugar evenly over top. Drizzle with pineapple juice. Dot with butter.
TO PREPARE THE TOPPING:
Mix together oatmeal, brown sugar, flour and baking powder. Rub in butter to make crumbs. Divide topping between the 2 custard cups and pat evenly on top of apple-pineapple mixture.
Bake in preheated 350 degree F oven for 30 minutes or until apples are tender, mixture is bubbling and crust is slightly browned.
