Recipe: Emeralds and Rubies Stir Fry (using broccoli and dried cranberries)

2 teaspoons light tub margarine
1/2 teaspoon grated lemon zest
2 cups very small broccoli florets
1/4 cup sweetened dried cranberries (regular or orange or cherry flavored)
1 tablespoon frozen orange juice concentrate
Heat a large, deep nonstick skillet or wok over medium heat. Cook the margarine and lemon zest for 10 to 15 seconds, or until the margarine is melted and the zest is warmed through, stirring occasionally.
Stir in the broccoli, cranberries, and orange juice concentrate. Cook for about 2 minutes, or until the broccoli is warmed through, stirring constantly. Serve immediately for the best color. (The orange juice will discolor the broccoli after about 20 minutes, but the flavor will not be harmed.)
Makes 4 servings
