Recipe(tried): Father's Day 2001 Menu & Recipes

Hi Everyone,

Gosh it's great to be posting again at my favorite place, TKL. It's like being home with old friends!!!

Father's Day is going to be celebrated a day early because our daughter and her husband are driving up from West Palm Beach to pick my old Jeep Cherokee...sicne they are driving back tomorrow, the dinner is tonight. One of the recipes that I am looking forward to making is a Homemade Peach Pie with the addition of fresh lemon peel and fresh lemon juice. Peaaches are in abundance now at the markets and they look too good to pass up.

Here is the menu for tonight's celebration:

Father's Day 2001 Menu:

Warm Artichoke and Garlic Dip
Assorted Crackers
Calypso Coolers

Eye Round Roast with Golden Mushroom Gravy
Garlic Mashed Potatoes
Fresh Sweet Peas
Fresh Green Beans
Twice Baked Sweet Potatoes w/ Apples, Orange Peel and Spices
Glazed Carrots

Fresh Lemon Peach Pie and Vanilla Ice Cream

I always have to have mashed potatoes and peas for DH as he just adores the combination. I myself am not a mashead potato lover therefore, the sweet potatoes are for me and Mama.

Happy Father's Day to all the wonderfully sweet men who give so much of themselves to their children, wives and families and who strive to keep the home fires always burning.

The Recipes:

Calypso Coolers
serves 8-10

8 oz. Capt. Morgan's Spiced Rum
2 oz. grenadine syrup
4 oz. Peach Schnapps
16 oz. orange juice

Combine everything in a large pitcher and serve over crushed ice.

Warm Artichoke and Garlic Dip
serves 6-8

1 13 oz. cans or jars artichoke hearts, drained
1 cup mayo
2 scallions, minced
2 garlic cloves, minced
2 tbsp. lemon juice
1 cup Parmesan cheeese, plus extra for sprinkling
2 tbsp. fresh parsley, chopped
1/2 tsp. oregano
1/2 tsp. thyme
cayenne pepper, to taste
paprika for sprinkling over
toasted pitas, french bread slices or asst. crackers

Oven at 350. Lightly oil a quart shallow casserole dish. Mix everything in a bowl and spread into dish. Sprinkle on Parmesan and paprika and bake for 20 minutes til hot and bubbly.

Eye Round of Roast with Golden Mushroom Gravy
serves 8-10

1 (6 lb.) eye of the round roast
2 cans Campbell's Soup Golden Mushroom
1 pkg. Lipton Onion Soup Mix
olive oil
3-4 garlic cloves, mashed
salt and pepper

Rub roast with oil, make a mash with the garlic and salt and pepper, rub all over and insert in roast by making slits and inserting the garlic in. Heat 2 T. olive oil in a Dutch oven, place roast in and brown on all sides. When all browned, place roast in the middle of a large piece of heavy aluminum foil. Empty mushroom soup over roast, sprinkle the onion soup over this. Seal the foil securely, place entire package onto a 9x13" baking pan and bake 350 for 3 hours. When you open the foil, the gravy is done and the meat is so very tender, slicing it is "like buttah".

Supreme Garlic Mashed Potatoes

6-8 potatoes, washed, peeled and cubed
1 stick butter
1/2 cup sour cream
salt and pepper
3 garlic cloves
1/4 cup milk or more if needed

Boil potatoes and the garlic cloves together. When tender, mash with potato masher, add butter and mash some more, add sour cream and enough of milk to your liking for consistency. Season with salt and pepper.

Florida Sunshine Glazed Carrots
Serves 6

6 carrots, peeled and sliced large chunks
2 tsp. sugar
1/2 tsp. ground cinnamon
1 tsp. ground corriander
1/4 tsp. allspice
1/2 stick (1/4 cup) butter
salt and pepper to taste
10 dried apricots, slivered
1/3 cup sliced almonds
2 tbsp. fresh orange or tangerine juice

Place the carrots in a saucpan, cover barely with water and bring to a boil. Reduce heat and simmer 10. mts. Rinse under cold water and drain.

Stir the sugar and spices together and set aside.

Melt the butter in a skillet, stir in the carrots and the citrus juice. Sprinkle with the sugar mixture and cook over med. heat til carrots are glazed and sauce is slightly thick. Season with a pinch of salt and pepper.

Stir in apricots and almonds and cook an additional 5 mts. Serve immediately.

Southern Green Beans

1 lb. fresh green beans, ends snapped off
2 large onion slices, chopped
1 garlic clove
2 bacon strips
2 tbsp. veg. oil
pepper
salt
1-2 drops of hot sauce
splash of red wine vinegar or balsamic vinegar

Cook bacon pieces with onion in a med. pot. After 3 min. add the oil and stir. Add seasonings and garlic clove. Add vinegar and beans, stir to coat. Cover and lower heat to med-low. Check after 5 min., stir, and lower heat to low. Cook for about 25 min or tender. You should have a delicious brown sauce coating the beans when they are ready.

Twice Baked Sweet Potatoes with Apples, Orange Peel and Spices
8 servings

8 medium sweet potatoes
1/3 cup firmly packed brown sugar
1/2 cup butter, softened
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/2 tsp. grated orange peel
2 medium Granny Smith apples, peeled, cored and coarsely chopped

Oven at 350. Prick the potatoes all over to let out steam. Bake 55-65 minutes til fork tender. Cut thin lengthwise slice from the tops. Scoop out the insides and place the shells on a baking tray. Blend the insides, butter, spices ana sugar in a bowl with a mixer. Stir in the chopped apples by hand and fill the shells. Bake for another 20-25 minutes.

Father's Day Fresh Lemon Peach Pie

CRUST:
2 1/4 cups flour
1 tbsp. sugar
1/2 tsp. salt
1 1/2 sticks (3/4 cup) butter, chilled and cut into small pieces
1 tbsp. fresh lemon juice
6 tbsp. ice-cold water

Mix the flour, sugar and salt in a large bowl. Cut in the butter til it resembles coarse meal. Blend in the lemon juice and enough cold water til it forms a moist dough. Gather into 2 balls, flatten into disks and refrigerate for 1 hour.

FILLING:
4 1/2 lbs. fresh ripe peaches
peeled, pitted and cut into thick wedges
3/4 cup firmly packed golden brown sugar
1/4 cup flour
1 tbsp. grated lemon peel
1 1/4 tsp. cinnamon

Oven at 400. Mix everything in a large bowl and let it stand for 5 minutes. Roll out 1 disk onto a floured surface and roll out into a 13" round. Transfer to a glass pie dish. Press into the dish, trim the edge. Spoon the filling in. Roll out the other disk onto floured surface into another 13" round. Lay over filling. Press the edges together, trim and pinch the edges into a decorative flute. Cut 3 vents on top and place the pie onto a large baking sheet to catch any spills. Bake 45 minutes. Reduce heat to 350 and bake 15 minutes more. Serve with vanilla ice cream.
