FIVE WAYS TO SERVE ROAST CHICKEN
"Five inventive ways to enjoy a quick and easy dinner made with a roast chicken from the supermarket, deli or specialty foods store."
Start with 1 roast chicken.
1. SPINACH SALAD WITH CHICKEN
Toss tender young spinach leaves and sliced ripe strawberries with your favorite nonfat or lowfat vinaigrette. Arrange on a serving plate, top with warm roast chicken cut into bite-sized pieces, and garnish with strawberries on the stem.
2. ASIAN CHICKEN SANDWICH
Spread your favorite bread (sourdough is great) with hoisin sauce, and top with sliced skinless roast chicken, tender sprigs of watercress, thinly sliced ripe mango and minced scallions.
3. CHICKEN WITH CORN-AVOCADO SALSA
Pick up a roast or barbecued chicken. Carve the warm chicken into slices, and serve with your favorite prepared salsa embellished with corn and avocado.
4. CHICKEN CAESAR
Pick up a package of Caesar salad greens (they usually include the croutons and often a lowfat dressing), and toss with shredded roast chicken.
5. CHICKEN, MOZZARELLA AND BASIL SALAD
Toss warm sliced roast chicken with a tiny amount of extra-virgin olive oil and about 1/2 cup shredded fresh basil leaves. Mound in the middle of a platter. Surround with alternating slices of ripe tomato and fresh mozzarella cheese. Garnish with whole basil leaves.
