Recipe(tried): For dinner tonight... Coconut Crusted Fish with Mango Salsa

Hi everyone,
I had this during my recent holiday,its wonderful I ate it overlooking the sea just as sunset began.I won,t be able to do that tonight but hears the rec.

COCONUT CRUSTED FISH WITH MANGO SALSA

2/5 cup desiccated coconut
1 Tbls good butter
3 Tbls cream
1/2 tsp fresh ginger
salt to taste
4 x 8 oz firm white fish fillets

Mix all ingredients except fish together.Line a baking tray with buttered foil (shiny side up). Place fish on foil and spread a layer of mixture over each fillet. Place in preheated oven for 20-25 mins. Flesh should be opaque and firm to touch.

MANGO SALSA

1 large mango(flesh only)
1 chilli chopped
Juice of 1/2 lemon or lime
1/2 tsp sugar
salt + pepper to taste
handful of fresh coriander chopped

Mix every thing to gether and stand at room temp. whilst fish is cooking.

I,ll serve it with pineapple rice and grilled peppers.
For dessert how about.Oranges and strawberries with a caramel sauce,If anyone wants that rec. I,ll post it.
