Recipe: Chicken Soup with Barley (Bob's Red Mill barley package recipe)

2 1/2 quarts water
2 1/2 tsp. salt
3 lbs. chicken pieces
1 1/2 cups sliced celery
1 1/2 cups sliced carrots
1/2 cup chopped onion
1 tsp. dried thyme
1 bay leaf
1/4 tsp. ground black pepper
1 lb. fresh mushrooms
3/4 cup Bob's Red Mill Pearl Barley
In large saucepan combine water, chicken, salt, celery, carrots, onion, thyme, bay leaf and pepper; bring to boil. Reduce heat and simmer, covered until chicken is tender (approximately 1 hour).
Meanwhile, slice mushrooms and set aside.
Remove chicken from broth and take meat off of the bones; cut into cubes. Return chicken to saucepan and add barley and mushrooms, Simmer, until barley is tender, about 50 minutes.
Makes 8 servings
