FRENCH DOUGHNUT MUFFINS
1 1/2 cups flour
3/4 cup sugar, divided use
1 1/2 teaspoons baking powder
1/4 teaspoon ground nutmeg
1/8 tesaspoon salt
2/3 cup margarine or butter, melted, divided use
1/2 cup milk
1 egg, slightly beaten
1/2 teaspoon ground cinnamon
Preheat oven to 350 degrees F. Grease a muffin tin.
In a large bowl combine flour, 1/2 cup sugar, baking powder, nutmeg, and 1/8 teaspoon salt. Make a well in center.
In a small bowl combine 1/3 cup of the margarine, milk, and egg. Add flour mixture. Stir just until moist - batter will be lumpy. Spoon batter into prepared muffin cups, filling each 2/3 full.
Bake at 350 for 20-25 minutes.
Meanwhile, combine the remaining sugar and cinnamon. Immediately dip tops of muffins into remaining melted margarine, then into cinnamon-sugar mixture. Serve warm.
