Recipe: Zucchini Herb Bread (quick bread using parmesan and onion)

ZUCCHINI HERB BREAD

1 1/2 cups whole wheat flour*
1 1/2 cups unbleached all-purpose flour
1 tbs. baking powder
1/2 tsp. salt
1 tsp. dried oregano
1 tsp. dried basil
1/4 tsp. garlic powder (optional)
1 tbsp. dried minced onion
1/2 cup Parmesan cheese
1 cup grated zucchini (unpeeled)
1 1/4 cups milk
1 egg
1/4 cup oil

Preheat oven to 350 degrees F. Grease and flour a loaf pan (9x5x3-inches)

Stir together dry ingredients; set aside.

Combine remaining ingredients. Add to dry ingredients. Stir just until blended. Pour batter into prepared pan.

Bake 1 hour and 15 minutes or until done.

*1 1/2 cups unbleached all-purpose flour may be substituted for the whole wheat flour.

Makes 1 loaf
