Recipe(tried): French Onion Soup (microwave)
SoupsFRENCH ONION SOUP
6 tablespoons margarine
2 extra large or 4 large yellow onions, halved and thinly sliced
2 cans condensed beef consomme
1 cup hot water
1/4 cup dry white wine
1 tablespoon Worcestershire sauce
1/8 teaspoon black pepper
8 slices French bread, 1/2 inch thick, toasted
1 cup shredded Swiss cheese
2 tablespoons grated Parmesan cheese
In a 3 quart casserole place margarine and onions; cover. Microwave on high for 18 to 20 minutes, or until tender, stirring 2 times.
Add consomme, hot water, wine, Worcestershire sauce and pepper. Re-cover. Microwave on high for 8 to 9 minutes, or until boiling.
Divide soup among four individual 15 ounce casseroles or soup bowls. Top each bowl with 2 slices French bread. Sprinkle with Swiss and Parmesan cheeses. Microwave until cheese is melted, about 2 minutes.
