Recipe: Fresh Pear Cake

Fresh Pear Cake
Hi Mike here is a recipe from the "Yankee Church Supper Cookbook". I've not made it yet but intend to. Enjoy!

2 cups granulated sugar
3 eggs, well beaten
1 1/2 cups cooking oil
3 cups all purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
2 tsp. cinnamon
3 cups thinly sliced pears, cored and peeled

Combine sugar, eggs and oil. Beat well. Combine flour, baking soda and salt. Add to sugar mixture, 1 cup at a time, mixing well after each addition. Stir in vanilla, cinnamon and pears. Turn into a well greased 10-inch bundt or tube pan. Bake at 350 degrees for 1 hour. Remove from pan and allow to cool. Pour over Confectioner's Sugar Glaze (see below).

Confectioner's Sugar Glaze:

1 1/4 cups sifted confectioner's sugar
2-4 Tbsp. milk

Combine ingredients, blending till smooth.
