Recipe: Scallops in Double Pepper Sauce

SCALLOPS IN DOUBLE PEPPER SAUCE

1/4 cup olive oil
5 chopped garlic cloves
1 lb bay or sea scallops
3/4 cup slivered red peppers
3/4 cup slivered green peppers
1/2 cup chopped onion
1/2 tsp Tabasco pepper sauce
1/4 tsp salt
2 tbsp drained capers

In a large skillet, heat the oil and add the garlic. Cook until golden, about 1 minute.

Add the scallops, peppers, onion, Tabasco sauce and salt. Stirring constantly, cook for 5 minutes, or until the scallops turn white and the vegetables are crisp-tender.

Stir in the capers and serve immediately.
