Recipe: Frozen Maraschino Salad (using cream cheese, orange and pineapple, 1950's)
Desserts - FrozenFROZEN MARASCHINO SALAD

1 (4 oz.) bottle maraschino cherries (16 cherries)
1 (3 oz.) pkg. cream cheese
1/3 cup mayonnaise
2 medium sized oranges
1/2 cup drained crushed pineapple
1/2 cup chopped pecans
1 cup heavy (whipping) cream
2 tbsp. sugar
Drain liquid from cherries, save. Cut cherries into small pieces.
In a bowl, soften cream cheese, add maraschino liquid, cherries and mayonnaise, blend thoroughly.
Peel and dice oranges. Add orange, pineapple and pecans to cream cheese mixture; mix well.
In a bowl, whip heavy cream until stiff, adding sugar gradually. Fold into fruit mixture.
Pour into 6-8 individual molds or a 1 quart mold. Place in freezer; freeze until firm.
Unmold and serve on crisp salad greens. This salad may be poured into air-tight containers and stored In a home freezer.
VARIATION:
"I add green maraschino cherries in bottom of the mold before adding the salad mixture to give the salad more color."
Makes 6 to 8 servings
