EASY COCONUT ICE CREAM
7 cups unsweetened coconut milk (about four 14 ounce cans)
2 cups sugar
1 teaspoon salt
In a large saucepan combine the coconut milk, sugar and salt. Bring it to a gentle bubble on medium-high heat, stirring until sugar dissolves, about 1 minute. Place in bowl; cool to room temperature then refrigerate until chilled.
Process mixture in ice cream machine according to manufacturer's directions.
Serve, or freeze airtight up to two weeks.
(Cut this recipe in half if your ice cream machine is small.)
