Recipe: Fruited Pork (with apple, walnuts, raisins, and mandarin oranges) (microwave)

1/2 cup water
1/4 cup cider vinegar
2 tablespoons light molasses
1 tablespoon soy sauce
dash pepper
1 pound boneless pork loin roast, cut into 2x1/4-inch strips
1 medium apple, coarsely chopped
1/4 cup chopped walnuts
1/4 cup raisins
1 (11 oz) can mandarin oranges, reserve 1/4 cup juic
6 teaspoons cornstarch
hot cooked rice (to serve)
In 2 quart casserole with cover mix water, vinegar, molasses, soy sauce and pepper. Microwave at high for 1 to 1 1/2 minutes, or until hot, stirring after half the time. Stir in pork. Cover. Refrigerate for about 1 hour.
Drain pork, reserving 2 tablespoons marinade. Set aside reserved marinade.
Place casserole with pork on Micro Go Round in microwave oven. Microwave at 70% (medium high) for 3 to 6 minutes, or until pork is no longer pink. Drain, reserving liquid.
Add apple, walnuts and raisins. Microwave at 70% (medium high) for 2 to 3 minutes, or until apples are tender.
Stir in oranges. Cover and set aside.
In small mixing bowl, blend reserved marinade, reserved cooking liquid and 1/4 cup mandarin orange juice. Add cornstarch. Mix well. Microwave at high for 2 to 3 minutes, or until thickened, stirring 3 or 4 times.
Stir into pork mixture. Serve over rice.
TO PREPARE IN ADVANCE AND FREEZE:
Follow recipe above, except do not drain cooked pork, and add reserved marinade to pork with apples, walnuts and raisins. Do not microwave this mixture. Cover and freeze in 2 quart Casserole/Cover fo up to 2 months. To defrost, microwave frozen mixture at 70% (medium high) for 11 to 17 minutes, or until heated through, breaking apart and stirring 2 or 3 times. Drain liquid into small mixing bowl. Set aside. Stir oranges into casserole. Cover. Add 1/4 cup mandarin orange juice to reserved cooking liquid. Add cornstarch. Mix well. Continue as directed.
