Recipe: White Chocolate and Cherry Fudge

WHITE CHOCOLATE AND CHERRY FUDGE

1 2/3 cups sugar
1 small can (2/3 cup) carnation evaporated milk
2 tbsp butter
9 squares (1 oz each) white chocolate
2 cups mini marshmallows
1 cup glace cherries, halved (do not use maraschino cherries)

Combine sugar, milk, and butter in large heavy saucepan. Cook and stir over medium heat until mixture boils vigorously. Boil 4 to 5 minutes, stirring constantly. Reduce heat to low.

Add white chocolate; stir until completely melted.

Remove from heat. Add marshmallows; stir until marshmallows melt. Stir in cherries.

Pour into 8-inch foil-lined square cake pan. Chill until set.

Store in refrigerator.

Makes about sixty-four (1-inch) squares
