Recipe: Garlic Chicken with Artichokes and Sun-Dried Tomatoes

Garlic Chicken with Artichokes and Sun-Dried Tomatoes

2 boneless chicken breasts
Salt and pepper (but I prefer no salt)
1 teaspoon olive oil (I just spray)
1 cup chicken broth
3 cloves garlic, crushed
1 tablespoon Dijon-style mustard
1/2 teaspoon dried thyme
1 can artichoke hearts, drained (I use the quartered ones, cheaper)
1/3 cup sun-dried tomatoes, coarsely chopped

Season chicken, spray pan, saute chicken for 3 minutes on each side (medium heat).

In bowl, whisk together broth, garlic, mustard, thyme and tomatoes.

Add artichokes, and broth mixture to pan, bring to boil, then reduce heat to low, cover and simmer 20 minutes. Serve over pasta.
