Recipe(tried): Garlic Lemon Chicken

Hello Everyone,

I had been enjoying all your posts and tried a new recipe for dinner last night, it was so yummy that I had to share. We are in Spring at present but the weather has been particulary unsettled, blue skies one hour, 150km winds the next. Yesterday was cold so comfort food was a must!!

Enjoy - Carey

500g any type of skinless chicken pieces
1 tablespoon lemon rind
5 tablespoons lemon juice
2 cloves garlic (I used 2 teaspoons crushed)
1 teaspoon Paprika
1 tablespoon soy sauce.

Preheat oven to 180 (350) degrees. Mix all ingredients except chicken together, then add chicken (no need to marinade overnight). Place chicken onto oven foil and wrap so juices are sealed. Cook for 30 minutes or until juices run clear.

I served this with mashed potatoe and beans (covered in gray) but it also says you can have it cold on a salad.
