German Apple Pancake

One of our favorite breakfast ideas
Recipe By : Jann Grimes, adapted from a Betty Crocker Recipe
Serving Size : 4-5

4 whole apples, peeled, cored and sliced
4 whole eggs
3/4 cup flour
3/4 cup milk
1/2 teaspoon salt
1/4 cup brown sugar
1/4 teaspoon cinnamon or apple pie spice
1/2 cup nuts, optional (walnuts or pecans best) -- chopped

Arrange apple slices in a greased preheated glass pie pan. Beat together eggs, flour, milk, and salt. Pour over apples. In a small bowl mix brown sugar, cinnamon or apple pie spice, and nuts (optional). Sprinkle over pancake. Bake at 400 degrees 25-30 minutes or till puffed and brown.
