MINI MINCEMEAT NUT CAKES
1/2 cup butter or margarine, softened*
1/3 cup firmly packed dark brown sugar
3 eggs
2 1/2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 (14 oz.) can sweetened condensed milk
1 (28 oz.) jar commercial mincemeat
2 cups chopped walnuts
Cream Cheese Icing (recipe follows)
Cream butter; gradually add sugar, beating well at medium speed of an electric mixer. Add eggs, one at a time, beating after each addition.
Combine flour baking powder, baking soda and salt; add to creamed mixture alternately with condensed milk, beginning and ending with flour mixture. Mix just until blended after each addition.
Stir in mincemeat and walnuts.
Line mini cupcake pans with paper liners. Drop heaping teaspoon of batter in each.
Bake in a 350 degree F oven for 20 to 25 minutes. Cool, frost with icing and decorate as desired.
CREAM CHEESE ICING
1 (1 lb.) box powdered sugar
1 (8 oz.) pkg. cream cheese, softened
1 stick (1/2 cup) butter or margarine, softened
1 tsp. vanilla
Combine the ingredients for the icing together until smooth.
*I saw a recipe exactly the same as this one except using 1/4 cup shortening.
