GERMAN POTATO PANCAKES
Now you can enjoy classic potato pancakes--with only a fraction of the fat and calories of the original version.
Original 170 calories...After..69 per pancake
2 cups shredded potatoes
6 egg whites, lightly beaten
1 1/2 tablewpoons all-purpose flour
1 tablespoon grated onions
1/2 teaspoon salt (optional)
1/8 teaspoon ground black pepper
Squeeze the excess moisture from the potatoes. Transfer the potatoes to a large bowl. Stir in the egg whites. Then stir in the flour, onions, salt and pepper.
Lightly spray an unheated large skillet or griddle with no stick spray. Heat over medijm heat. Meanwhile, shape the potato mixture into six 1/4 inch thick patties. Add the patties to the hot skillet or griddle. Cook about 5 minutes on each side or until lightly browned and crisp. Serve immediately..Makes 6 pancakes.
