Recipe: Cajun-Style Garbanzo Nuts

When I read what had been posted during our vacation about Garbanzo beans it reminded me of this recipe from the 1st cookbook I bought while out of town. We want to try it very soon. It's from Simply Colorado.

Cajun-Style Garbanzo Nuts

This spicy snack also makes a good salad topper.

1 can (15 1/2 ounces) garbanzo beans
Cooking speray
1/2 to 1 teaspoon pepper
1 teaspoon garlic powder
1/4 to 1/2 teaspoon cayenne pepper
1/4 teaspoon dried whole oregano
1/2 teaspoon salt (optional)

Preheat oven to 325 degrees F.

Drain and rinse beans. Spread beans on a baking sheet that has been coated with cooking spray.

In a small bowl combine all spices. While beans are moist, sprinkle with spice mixture.

Bake for 45-55 minutes, or until browned and crisp. Stir as needed to brown evenly.
