Giant Oatmeal Drop Cookies

Yield: 15 cookies
These big cookies have got big flavor. Teeny-weeny wimpy cookies they aren't. Full of nuts, raisins, and even applesauce, these cookies are as big as plates. No, no, they're bigger than that. They're as big as the moon. Well, the flavor is that big.
1 cup packed dark brown sugar
2 tablespoons butter or stick margarine, softened
1/2 cup applesauce
1 large egg
1-1/2 cups all-purpose flour
1-1/2 cups regular oats
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup raisins
1/2 cup chopped walnuts
1-1/2 teaspoons vanilla extract
Cooking spray
Preheat oven to 350F.
Beat sugar and butter at medium speed of a mixer until well-blended (about 5 minutes). Add applesauce and egg; beat well.
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, oats, soda, cinnamon, and salt.
Add flour mixture to sugar mixture; beat at low speed until well-blended. Stir in raisins, walnuts, and vanilla.
Using 3 level tablespoons per cookie, drop dough 2 inches apart onto baking sheets coated with cooking spray; flatten slightly.
Bake at 350F for 10 to 15 minutes. Remove cookies from pans; cool on wire racks.
