Recipe(tried): Gina's Chicken Cacciatore--WONDERFUL!

I am off of work today with my 8-year old, Ali, who has strep throat. The girls played so well together, mostly reading, drawing, and playing games inside, that I had a lot of time to do domestic things. I got out our Snow Village and put it on the mantle (a little early, but I love how it looks at night when it's all lit up).
I made Gina's Chicken Cacciatore, a salad, and French Bread. I just tried a taste, and it's so delicious. Only change I made was that I used diced boneless chicken instead of whole breasts and added Parmesan to the sauce. I am serving it on our antique Fiestaware and it will look so pretty on the bright colors.
