Recipe: Ginger-Mayo Salmon Salad Sandwiches

GINGER-MAYO SALMON SALAD SANDWICHES

1/2 cup jarred mayonnaise
3 teaspoons peeled and grated fresh ginger
1 tablespoon thinly sliced chives
1/4 cup finely chopped cilantro leaves
Sea salt and freshly ground black pepper (to taste)
1 pound leftover grilled, broiled or poached salmon, skin removed and flaked
4 split soft rolls

Combine the mayonnaise with the ginger, chives, cilantro, salt and pepper.

Flake salmon in a bowl, then add flavored mayonnaise to taste (save any extra for shrimp, crab cakes or sandwich spread).

Spoon salmon salad on soft rolls and serve.

Makes 4 servings
