FRESH PEAS AND PROSCIUTTO
1/4 cup olive oil or vegetable oil
1/3 lb. prosciutto or deli-style ham slices, chopped (1/3 cup)
1 small onion, chopped (1/4 cup)
2 lbs. fresh peas, shelled*
1/2 cup chicken broth
1 tbps. sugar
1 tbsp. chopped fresh parsley
1/4 tsp. salt
In a 10-inch skillet, heat oil over medium-high heat. Cook prosciutto and onion in oil, stirring frequently until onion is tender.
Reduce heat to medium. Stir in remaining ingredients. Cover and cook about 10 minutes or until peas are tender.
*2 1/2 cups of frozen peas from a 1-pound bag can be substituted for fresh peas. After stirring in remaining ingredients, cover and cook 3 to 5 minutes or until peas are hot.
Makes 4 servings
