Recipe: Orange Jumbles with Orange Glaze (soft drop cookies, Betty Crocker recipe)

ORANGE JUMBLES

1/4 cup shortening, softened
1/4 cup butter, softened
1/2 cup sugar
1 large egg
1 teaspoon vanilla
1 1/8 cups flour
1/4 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons grated orange rind
Orange Glaze (recipe follows)

Heat oven to 375 degrees F. Lightly grease cookie sheet(s).

Mix together shortening, butter, sugar, egg, and vanilla; set aside.

Stir together flour, baking soda, and salt. Add to shortening mixture. Stir well. Mix in grated orange rind. Drop batter by rounded teaspoonfuls about 2 inches apart on prepared cookie sheet.

Bake until lightly browned. The cookies should be soft. Cool slightly and remove from cookie sheet. Dip hot cookies into Orange Glaze and place on baking rack.

ORANGE GLAZE

1/3 cup powdered sugar (or more as needed)
3 tablespoons orange juice
1 teaspoon grated orange rind

Mix together sugar, orange juice, and orange rind. Add more powdered sugar, as needed for desired consistency.

Makes 3 dozen cookies
