Recipe: Curried Rice Pilaf (using cooked rice, grill recipe, foil packet)

CURRIED RICE PILAF

2 cups cooked long grain rice
1/2 cup onion
1/2 cup mixed dried fruit bits
1/4 cup chopped celery
1 tablespoon margarine or butter
1 1/2 teaspoons instant chicken or beef bouillon granules
1/2 to 1 teaspoon curry powder
1 clove garlic, minced
1/8 teaspoon ground black pepper

In a medium mixing bowl combine cooked rice, onion, fruit bits, celery, margarine or butter, bouillon granules, curry powder, garlic, and pepper.

Tear off a 36x18-inch piece of heavy foil. Fold in half to make a double thickness of foil that measures 18x18-inches. Place pilaf in center of the foil. Bring up two opposite edges of foil and seal with a double fold. Fold remaining ends to completely enclose the pilaf, leaving space for steam to build.

Preheat gas grill. Adjust heat for direct cooking. Place foil packet on grill rack over medium to medium-high heat. Cover and grill about 20 minutes or till onion is tender, turning the packet once halfway through.

Makes 4 servings
