Recipe(tried): Goulash Soup

Goulash Soup
Try this! It's GREAT!

5 slices bacon, chopped
3 lbs bonless chuck, trimmed and cut into 1/2 inch cubes
2 TBSP vegetable oil
4 med onions chopped fine
3 garlic cloves, minced
3-5 TBSP Hungarin sweet paprika (I buy SZEGED brand) It must be sweet hungarian, American won't do the trick.
1-2 TBSP crushed caraway seeds
1/3 cup all purpose flour
1/4 red wine vinegar (a must)
1/4 cup (or about one can) tomato pase
5 cups beef broth
5 cups water
1/2 tsp salt
2 red bell peppers (optional)
4 large russet potatoes (optional)

In 8 quart heavy kettle, cook bacon until crisp, remove and set aside. Then brown chuck in small batches and remove, set aside.

Reduce heat to med and add oil. Add onions and garlic, cook until golden. Stir in paprika, caraway seeds, and flour and cook stirring 2 min. Whisk in vinegar and tomato paste and cook whisking 1 min. Mixture will be thick. Stir in broth and water, salt, peppers bacon and chuck and bring to a boil stirring to make sure it doesn't stick. Cover and simmer1 to 3 hours. (the longer the better) Ialso put an elevated rack above the burner to keep the pan from direct contact with the burner. Thes helps keep it from sticking and scorhing. During the last 45 min add potatoes. Adjust salt and pepper to taste, you may also wish to add some more papprika. Be sure to use the hungarian sweet.

Enjoy, my family thinks this is great. I searched for 30 years for this recipe after serving in Germany.
