Recipe: Beef Broccoli Pie (using Bisquick, ground beef, tomato and cheese)

BEEF BROCCOLI PIE
1 cup fresh broccoli flowerets, blanched
2 small zucchini, sliced and blanched
1 lb. extra-lean ground beef
3 cloves fresh garlic, minced
1 small onion, chopped
1 small fresh tomato, chopped
2 cups shredded Monterey Jack cheese
4 eggs
3/4 cup biscuit mix (Bisquick)
1/4 cup milk
Salt and pepper to taste
Preheat oven to 400 degrees F.
Blanche the broccoli and zucchini; set aside.
Brown ground beef until crumbly. Add garlic and onion and cook until the onion is tender.
Combine the broccoli, zucchini, tomato and ground beef mixture. Season with salt and pepper to taste. Spread the mixture in a large pie plate or quiche pan or use 2 smaller pans. Sprinkle shredded cheese over the mixture.
Beat together the eggs, biscuit mix and milk until smooth. Pour over cheese.
Bake for 35 minutes or until knife inserted in center comes out clean. Let quiche stand for 5 minutes before cutting.
Makes 6-8 servings
